DON'T DRINK DON'T EATDREAT

Our vision behind the creation of a 100% natural product by a Greek family business. Μala Peruviana is produced by the finest raw materials, carefully selected at their best stage to subsequently place it in a container that is novel for the tomato industry but well-known and used in traditional tomato harvesting and conservation practice for years in Greek households.

Thus, using the exact same methods as our grandmothers did in late August, early September, that is when tomatoes are at their best, we carefully harvest tomato fruits and place all its nutrients within a glass bottle. This method allows us to preserve its flavors unchanged without using preservatives for a long time, until our new tomato fruits are grown and ripe. However...our dreams about tomato go far beyond that! We have married tomatoes with natural ingredients such as herbs, beetroot, black carrot, tangerines, and ginger to mention but a few…

…Our brand name

Mala Peruviana was established by the FOS Natural Creativity parent company. Its name was linked to the invaluable light of Greece and to the light of Ancient Greece. The name Mala Peruviana was used to bridge (and update) the historical interpretation of the tomato fruit with the Greek origin of the products we produce. We adopted the name Mala Peruviana (meaning “Evil Peruvian”) to honor the fruit of tomato following historical information about it. What’s more, cooking pots and utensils of that time contained a large quantity of lead and when cooking tomatoes, which are highly acidic, lead was released into the food causing poisoning. However, when they tried the fruit and they discovered the flavors of this fruit, they stopped cooking it in lead utensils and soon became an important part in their eating habits.
The color composition of the bottle is based on Aristotle’s theory on colors. According to his theory, the basic color of the universe is black and when mixed with the incoming “light” (FOS in Greek) of the sun it becomes red. Thus, black is the main color of our bottle, FOS is our company and together they produce the red color of the tomato juice.

Ingredients we use

Following my grandmother’s tradition...Best

I remember my grandmother storing all kinds of glass bottles all year round (then they didn’t throw away anything). It took me some time to realize the value of these glass bottles, sloppily placed in crates.
In the summer, when tomato was at its best, these bottles were well-rinsed to welcome the juice that would add color and flavor to our food throughout the winter.
Crates with vine-ripened arrived at our laundry-room with its masterfully whitewashed walls every August. The women in the neighbor, claiming to be experts in the “art of solidarity” rolled up their sleeves to become part of the celebration that marked the making of this red gold.
The first thing to do was to wash the bottles thoroughly and drain them upside down inside the crates. The black cauldron was ready and placed over the fire. The fire had to be lit when the cauldron was filled with bottles so that the fresh juice would boil there.
Tomatoes were meticulously washed in large wooden tubs and cut in half. Then they had to be grated. Each woman had her grater and they grated the cut tomatoes in basins removing both the flesh and the juice.

They slowly filled the bottles with a funnel and shut them tightly with a cork. The bottles that had been already filled were placed lying in the cauldron until it was full. Then the cauldron was ready to be filled with water and the fire was lit. The wood taken from the olive trees made a good fire to boil the precious juice of the year. After they had boiled for an hour or so, when the women were unsure sometimes about when to remove the bottles, they let the fire die and the water cool down so they would be able to take the bottles out.
At the same time, they had melted bee wax in an old pot and they immersed the bottleneck into the bee wax. So they completely sealed the cork in case they shrank so the air would not enter the bottle and spoil the juice.
This ritual lasted for days since they had to make tomato sauce for all households, always accompanied by singing and gossiping (with the best of intentions). It was a custom that required effort but gave life and joy to the neighborhoods.
After washing the tools and utensils used and cleaning the area, the process was concluded with the sentence ….< May we be in good health next year too, enjoy!!! >.
