Saute the onion and garlic, finely chopped, in the olive oil, the carrot in chunks. Add 2 pinches of thyme and laurel to bring out their aromas and while stirring add the Mala Peruviana. Cover and simmer on low heat for half an hour. Remove, allow to cool slightly and pass through a sieve. Now we have our sauce clean and we add the butter and the rest of the thyme. Used in various pasta, braised, saute-ed.
